Yes! They are flexible enough! As long as the length is long enough you're good to go!

Yes. But keep in mind any vibrating metal is going to eventually wear into a un-coated fingerboard eventually... Flats wear slower than rounds. As long as you do not have a super hard grip on your fretting hand you should be fine with any string, even more so with flats.
